Scrambled Eggs with Cherry Tomatoes and Arugula

Scrambled eggs are my preferred way to eat eggs. It’s quick and simple to make, without overstressing about ingredients or complicated recipes. I like to add thinly sliced scallions on top of my eggs. I have never loved any other food the way I love eggs. Scrambled eggs are my absolute, die-hard breakfast meal that I crave every morning. I prefer two eggs, paired with an assortment of spices.
Here is the recipe for my version of scrambled eggs.
Scrambled Eggs with Cherry Tomatoes and Arugula
2 large chicken or duck eggs
10 cherry tomatoes
½ tspn salt
½ tspn ground black pepper
¼ tspn paprika
¼ tspn oregano leaves
1 thinly sliced or minced scallion
1 small handful of arugula
1 tbsp sesame oil
Sauté the cherry tomatoes on medium heat with the spices. Beat two eggs in a bowl, and add spices. After 4 minutes of cooking the tomatoes, add the egg mixture to the pan. Add a small handful of arugula and minced scallion to top. Stir while cooking the eggs. Transfer to a plate. Serve while warm.
