No-Butter Grilled Cheese

I love eating melted cheese. It’s honestly my greatest guilty pleasure. My version of grilled cheese does not include butter. I like to add tomato slices to my grilled cheese. I’m impartial to oily breads so I toast my sourdough, instead of panfrying it in butter. I prefer a simple grilled cheese sandwich with four types of cheese: the holy affinity of cheddar, mozzarella, gruyère, and fontina. 

Here is the recipe for my grilled cheese. 

No-Butter Grilled Cheese

2 thick slices of sourdough bread 

Sliced cheddar, mozzarella, grated gruyère, sliced fontina 

Ground black pepper

2 thin slices of an heirloom tomato 

Toast the bread. Place the two slices of bread on a plate. Melt the four types of cheese in a pan over low heat. Continuously stir the cheese so it does not stick to the pan. When the cheese is melted together, transfer to the top of the bread. Assemble the sandwich. Add the tomato slices (optional). Serve while warm.
