Chia Seeds: Health Benefits and Gwyneth Paltrow’s Chia Seed Pudding Recipe

I’ve discovered my newfound love of chia seeds through Gwyneth Paltrow’s cookbook It’s All Easy. Chia seeds can be a simple addition to yogurt, granola, cereal, oatmeal, smoothies, juices, and milk. Chia seeds provide essential nutrients such as fiber, protein, minerals, omega-3 fatty acids, and antioxidants. Chia seeds can help the human body reduce cholesterol and improve cardiovascular and intestinal health. For the recent two weeks, I’ve been mixing chia seeds into hot oatmeal, incorporating chia seed pudding as a daily food, and drinking freshly pressed juices topped with chia seeds. My gut health has seen an improvement. My body feels healthier knowing that I am eating whole foods. My mind is at peace. That’s something we should all aspire to. Health is the most opulent form of wealth.

Ginger Chia Pudding
¼ cup chia seeds
½ tspn finely grated fresh ginger
¾ cup coconut water
6 tbsp canned coconut milk
2 tspn coconut sugar
¼ cup diced fresh peach (optional)
Stir well and refrigerate for 20 min or up to 1 day. Serve topped with diced fresh peach, if desired.
